Coins and power-ups (the red chili speed burst is my personal favorite) are placed to tempt you out of safe lanes. What keeps me coming back is the score chase. The speed ramps up subtly, the panda's panting sound effect (a nice touch) warns you when you're near your record, and the near-miss system rewards risky line choices.
